Violet Lemonade

  • 2 C. Wild Purple Violets (buds only)
  • 1 C. Filtered Water
  • 1C. Lemon Juice (freshly squeesed is best, about 5 lemons)
  • 2/3 C. Raw Local Honey
  • 5 C. Water, divided
  1. Add 2 cups of purple violets to a glass bowl
  2. Bring 1 cup of water to boiling in a small saucepan and pour over violets
  3. Let steep for 12-24 hours
  4. Strain out voilets with a mesh sieve placed over a glass bowl with a spout. Press to release all the juice from violets.
  5. Add the violet tea to a 2 quart pitcher and add the lemon juice.
  6. Add 1 cup of water and the honey to a saucepan. Heat gently to dissolve the honey. Pour honey water into the pitcher.
  7. Add remaining water and serve cold.
